Job Description

We’re looking for a Food & Beverage Manager who thrives on a challenge and is ready to make an impact!

In this role, you will provide strategic and hands-on leadership across our restaurant, bar, cafe, room service and conferencing operations, ensuring exceptional service standards, strong financial performance, and a motivated, high-performing team.

  • Lead and manage all Food & Beverage operations, ensuring consistent delivery of exceptional guest experiences.
  • Review and analyse the daily operational needs maintaining beverage, labour, product and expenses on budget.
  • Develop, implement and maintain quality standards for all food and beverage outlets including the supervision and direction of the food and beverage team.
  • Contribute to the development of the Annual Business Plan and Financial Budget, actively managing costs and performance throughout the year.
  • Prepare and review weekly and monthly forecasts across all food and beverage outlets.
  • Analyse daily operational performance, controlling labour, beverage, product, and expenses in line with budgeted targets.
  • Assist in the preparation of monthly performance reports, identifying key trends, risks, and improvement opportunities.
  • Recruit, train, mentor, and inspire a high-performing Food & Beverage team.
  • Ensure full compliance with food safety standards, liquor licensing requirements, RSA guidelines, and hotel policies.
  • Maintain a strong presence on the floor, leading by example and fostering a positive team culture.

Qualifications

  • Minimum 5 years of similar experience, ideally in the hotel industry.
  • Demonstrated leadership experience. 
  • Tertiary qualifications in Business or Hospitality preferred.
  • Proven capability in creating a positive and productive work environment
  • Excellent understanding of hotel systems and revenue management principles
  • Experience writing and interpreting budgets, controlling payroll expenditure and managing the overall revenue and expenses of a department.
  • Responsible Service of Alcohol Certificate.
  • Full Australian work rights.
