What you’ll do

As Interim Restaurant Manager of Flore, you will take over from the Restaurant Manager during maternity leave and be a key figure in delivering the two-Michelin-star experience our guests expect. You lead the service team with precision, warmth, and an unwavering eye for detail, ensuring every guest interaction reflects the standard of excellence Flore stands for. The service team consists of 8 full-time employees and two trainees.

You lead and inspire the front-of-house team during every service, setting the tone through your presence and professionalism. As the main point of contact for Flore, both internally and externally, you are the trusted go-to person for colleagues, guests, and partners alike. Internally, you work closely with all departments within De L’Europe to ensure smooth communication and collaboration, and you report directly to the F&B Manager. Externally, you manage guest enquiries regarding private dining, festive celebrations, and special occasions, guiding guests from their initial enquiry through to a seamless Flore experience.

You spot commercial opportunities and drive continuous improvement, while onboarding, training, and coaching staff to the Michelin-level standards Flore demands. You ensure seamless communication between the kitchen and the floor, so every course lands exactly as intended. At every turn, you look for ways to exceed guest expectations and turn a great dinner into an unforgettable memory. You safeguard our sustainability values by embedding sustainability into daily operations, and you foster a working environment where professionalism, openness, and team spirit go hand in hand.

Requirements

Who you are

·       At least 4 years of management experience in a Michelin-starred environment

·       Available from October 1st, 2026, until March 1st, 2027.

·       A genuine passion for gastronomy, sustainability and the art of hospitality

·       You know your wines and get excited about producers who farm with intention

·       Ability to perform at the highest level under pressure, with grace and calm

·       Enthusiastic about sharing knowledge and elevating the skills of those around you

·       A positive, hands-on team player with an exceptional eye for detail

·       Strong communicator who builds trust with both guests and colleagues effortlessly

·       Always composed, solutions-oriented and leading by example on the floor.

 

Nice to have

·       Affinity with sustainable cuisine

·       Knowledge of wines, sake, cocktails, coffee/tea or sommelier background

·       Fluency in Dutch and English; additional languages are a plus.
