About The Role - Te mahi

We are currently seeking a skilled and passionate Junior Sous Chef to join our team at Sudima Christchurch Airport.

This role supports the Sous and Head/Executive Chef in the cost-effective management of the kitchen and team to maximise Food and Beverage profitability. Overseeing the food preparation, production and implementation of menus which are designed to deliver innovative, safe food meeting market/customer needs and fall within budgeted guidelines are the main considerations. This full-time permanent role is based at Sudima Christchurch Airport Hotel.

Responsibilities | Ngā haepapa

  • Assisting the Sous and Head/Executive Chef in the leadership of the kitchen team whilst on shift and in the absence of the Sous and Head/Executive Chef.
  • Assist with planning costing and developing all menus
  • Ensure food standards, preparation, presentation and cooking techniques are established and monitored and maintained at that level. Work with the kitchen team and take corrective action where appropriate, and within company guidelines, if standards are not met.
  • Ensure the highest possible standard of hygiene is practiced and maintained by the entire F&B Service team to meet Health & Safety regulations and HACCP food preparation guidelines and maintain FCP Food Control Plans.
  • Maintain a sound knowledge of the hotel’s procedures for purchasing of food stocks, the control of purchasing levels and ensuring all necessary measures are in place to maintain budgeted food costs in all outlets.
  • Purchase all food products from the hotel’s preferred suppliers list inline with Sudima Hotels sustainability framework and SUPF goal

Requirements

About you | Ko koe tēnei

  • NZQF Diploma (ANZSCO Skill Level 2) or above - At least three years of relevant experience may substitute for the formal qualifications listed above. In some instances, relevant experience and/or on-the-job training may be required in addition to the formal qualification.
  • Qualifications appropriate to the role e.g., Hotel Kitchen Management / Bachelor of Culinary Arts Level 5 or similar Previous experience to include:
  1. Previous senior kitchen experience essential; minimum of 4 years senior chef experience in a 4-star hotel or similar establishment.
  • Confident, well-motivated, enthusiastic, and determined
  • Takes pride in work and has exceptional attention to detail
  • Ability to prioritise, work to deadlines and remain composed under pressure
  • Work to a high standard, accurate and organised
  • Approachable and flexible & a team player
  • Committed to continuing professional development
