Bar Manager
AccorAccor is looking for a Bar Manager to join Mercure Gold Coast Resort, a full-time, onsite role in Carrara, AU. The property sits between the lush hinterland and the Gold Coast beaches, featuring 292 rooms across 9 blocks, tropical gardens, two pools and a philosophy that invites guests to slow down, feel well and discover local experiences. The Bar Manager will be central to shaping the resort’s beverage program and bar atmosphere, with the pool and Palm Meadows Golf Course as a backdrop.
In this position you’ll oversee the resort’s bar operations and steer the beverage direction, from crafting cocktails and mocktails to curating a guest-focused bar experience. You’ll work closely with the F&B leadership and kitchen team, helping to keep service smooth during busy periods and ensuring the bar becomes a destination guests want to return to.

Shaping the bar experience at Mercure Gold Coast
On a day-to-day basis you’ll manage the bar’s operations, coaching the team to deliver warm, guest-first hospitality while driving sales and maintaining consistent service standards. You’ll stay involved in day-to-day guest interactions, ensure the bar runs efficiently, and partner with other outlets and the kitchen to support events, conferences and restaurant activities as needed.
Part of the role is resolving guest concerns with calm, professional responses and guiding onboarding, training and development for the F&B team. You’ll help foster a positive and inclusive culture across the bar and the wider resort, setting the tone for memorable experiences that reflect the property’s wellbeing and authenticity.
